October light between the pine wood and the salt ponds, on the Giens peninsula.
Why Terrae selected it
We slept here on 9 and 10 October. The hamlet sits in a protected pine wood, with the salt ponds on one side and a short road to the sea. It was a salt works until 1981, then empty for thirty years. A marina and a golf would have cut the pines and dried the ponds. The family put the old buildings back. The customs house had lost its roof. It is now the welcome, and the spa.
Adrian Lelièvre runs the hotel, the restaurant and the spa. Oliver is on the floor. Adrian's father, Stéphane, is a chef. He drew the rooms, the tables, and the dolphins on the walls, and he still makes the sauces. Adrian said: "My father did all the decoration, every choice of table." His parents started with fourteen seats, Stéphane in the kitchen, his mother in the dining room. The EU Ecolabel was already in the building. Adrian: "It is not greenwashing. We had to."
How life feels here
Experiences on site
The stay
Two terrace rooms, each with its own hot tub, in the pines. Dinner at Les Saliniers, in the hamlet, from 8pm, both nights. One of Stéphane's sauces is honey and thyme. Breakfast honey comes from their own hives. The rooms sit far apart, so a full house stays quiet. In the evening the hamlet meets at the fire. Adrian: "The brasero is where it converges. It lets us see people and tell them where they are."

What to know
We were here in October, not in winter. He talks about autumn as the season people forget. We can only describe the days we slept here.
The chapel is the hamlet's mark. There is mass on Sundays, for the village as well as for guests. The chapel stays closed during the day. About an hour and three quarters by car from Nice. Parking on site.
